No bake granola bars

Our family has been big into granola bars lately. When I saw this pin I just had to try it. It was super easy and fast - less than 20 min from start to finish (it does take about an hour to cool - but they are super yummy warm, just hard to eat!).

The recipe I followed:
1/4 cup butter
1/4 cup honey
1/3 cup brown sugar
1 tsp vanilla
2 cups Quaker oats
1 cup rice crispies
1/4 cup mini chocolate chips

In a small saucepan, combine the butter, honey and brown sugar over med heat. Once it starts to bubble, stir and then let it bubble for two minutes.

While the mixture is bubbling, pour your dry ingredients into a large bowl.

At the end of the 2 minutes, remove from heat and add the vanilla. Stir. Then pour over the dry mixture. Stir until coated.

Pour onto lightly greased cookie sheet (a jelly roll pan would be perfect but I don't have one). Press down with a wooden spoon. The sprinkle with chocolate chips and press down again. Let cool on the counter top about 1 hour.
